So I’ve been watching a TON of PBS lately - in particular, The Great British Baking Show. Tell me you have seen it! First of all, their accents….so soothing. Secondly, these people are extremely talented. I learn a lot watching it so it makes me want to hop up and start baking some of the things I see on the show. Thirdly, this show makes me feel sophisticated and who doesn’t love an educational show that makes you feel classy? One day, I hope to be as talented, using only gluten-free ingredients! Okay, I’m done obsessing….
Anyways, the baking bug has bit me! I’m guessing it has to do with my new t.v. show addiction along with all the delicious, dessert scented candles I’ve recently purchased. Since I had a TON of apples left over from my failed cleanse (16 to be exact) I thought it would be a cool idea to remake one of my favorites into a gluten-free option! I made some changes to an Apple Coffee Cake recipe from an older Gooseberry Patch cookbook. You could indulge in this recipe as a breakfast or dessert option. Another added plus is the warm vanilla sauce - I saved the extra sauce and have shamelessly been taking spoonfuls.
Gluten-Free Apple Coffee Cake
*Derived from a Gooseberry Patch recipe
¼ cup oil
1 cup sugar
½ teaspoon vanilla extract
1 ¼ cup gluten-free all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon xanthan gum
1 ½ cups peeled and chopped apples
3 Tablespoons brown sugar
½ teaspoon cinnamon
¼ cup nuts (I used a mix of pecans and walnuts)
½ cup sugar
1 Tablespoon gluten-free all-purpose flour
2 Tablespoons butter
¾ cup whipping cream
1 teaspoon vanilla extract
Preheat oven to 350 degrees and lightly grease a 9x9 baking dish with shortening or butter.
In a large bowl, beat together oil, sugar, eggs and vanilla. In a separate mixing bowl, measure flour, baking powder, baking soda, salt and xanthan gum.
Slowly mix dry ingredients into oil/sugar mixture. Fold in apples by hand and pour into greased baking dish.
Mix together crumble topping (brown sugar, cinnamon & nuts) and sprinkle on top. Bake for 50-60 minutes - Cake will get golden brown!
While cake is baking - In a small saucepan, over medium heat, heat sugar, flour and butter. Slowly whisk in whipping cream and vanilla and heat until sauce is slightly thickened. Serve warm over the top of coffee cake.
