There’s no such thing as a “healthy cookie”. And I am not one to eat fruit as a dessert. Because of this, I have yet to find a "healthy" dessert I love. I usually don't eat a lot of sweet treats but not because I don't like them. I try to eat healthy during the week and allow myself a cheat meal at least once - usually on the weekend. When I indulge in any cheat meal, my goal is to not completely fall off the wagon. I know myself - If I have snacks in the house, I will eat them. If I have extra desserts in the house, I will ABSOLUTELY eat them - especially if they include chocolate or peanut butter.
For all of those reasons, skillet cookies are the BEST. Not only are the toasty when you enjoy them, but you don’t have to make a whole batch of cookies that could potentially be saved and eaten throughout the week. After trying a recipe off of the Fresh Thyme website, I wanted to use a similar idea for a skillet dessert.
This Flourless Skillet Cookie contains beans for added protein as well as oats which add fiber and fill you up! One skillet is MORE than enough for 2 people :) If you are looking to make one smaller skillet, then be sure to halve the recipe below. You can use the other half of your garbanzos to make fresh hummus!
I made my skillet cookies two different ways listed and pictured below. One of them was PB & J inspired and the other was inspired by my favorite snack - apple and peanut butter.
What’s in your dream skillet cookie?
Flourless Skillet Cookie
*Makes 2 - 8 inch skillets
1 can garbanzo beans, drained and rinsed
½ cup natural peanut butter (or any nut butter)
1 Tablespoon vanilla
¼ cup maple syrup
¼ cup applesauce, unsweetened
¼ teaspoon salt
1 teaspoon baking powder
¼ teaspoon baking soda
1 Tablespoon water
½ cup quick oats
Toppings (You can really go wild with these - I chose my favorites!)
PB&J Skillet - ½ Tablespoon peanut butter, 4 strawberries, 1 Tablespoon sugar-free strawberry jam, powdered sugar sprinkle (optional)
Apple & PB Skillet - ½ green apple, 1 Tablespoon peanut butter whisked with ½ cup cool whip
Preheat oven to 350 degrees. Mix together salt, baking powder, baking soda, and oats in a small bowl - set aside.
Blend together garbanzo beans, peanut butter, vanilla, maple syrup, and applesauce until smooth - this will be thick.
Pulse in mixture of oats until all combined.
Grease inside of skillets with a touch of oil. I usually just use clean hands to do this!
Divide dough in half and fill each skillet. Bake in oven for 20-23 minutes or until set. Top with your favorites!
