NERD ALERT: One of my favorite things to do is to turn not-so-healthy dishes into meals that are more nutritious. This takes time, thought, and experimenting which we may not always have. My point is, sometimes I just want to have something convenient and fast on hand! I have found this to be not as easy in the “gluten-free” world. There are so many items in the middle aisles of the grocery store that have hidden ingredients and gluten is definitely one of them.
Three of my favorite “healthier” and quick meals include tacos, fajitas, and stir-fry. They are all tasty, protein and veggie packed, and can be made with easy, pre-bought little packets. Not only do most of these store-bought packets contain gluten, but they are high in sodium. After some quick research, I found it’s extremely easy to make these seasonings on your own, keep them in a cute little glass jar, and use them as needed (AND most of us already have many of these ingredients on hand) This method not only makes your meal more nutritious but also eliminates the gluten all together - WIN, WIN!
I made a Classic Chicken Fajita dish using the seasoning below. The “Spicy Black Bean Dip” on the side of the dish was a knock-off of the Trader Joe’s dip (recipe also found below). I have made a few more seasonings on my own and they never disappoint! This one just so happens to be my favorite.
Ingredients for Fajita Seasoning: 1 Tablespoon cornstarch 2 teaspoons chili powder 1 1/2 teaspoons brown sugar 1 teaspoon paprika 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1/2 teaspoon cumin 1/8 teaspoon cayenne pepper Directions: Combine together in a mixing bowl. Whole recipe makes about 4 Tablespoons of seasoning. Double if you'd like and store in a small glass jar away for up to 6 months. *For 1 pound of meat - Use 1 Tablespoon seasoning. Add ¼ cup water or stock and allow to thicken. I usually add this near the end of cooking.
*You can also add this to sour cream for a fast and easy chip dip!
Ingredients for Spicy Black Bean Dip:
1 can black beans, drained
3 Tablespoons water
1 Tablespoon tomato paste
1 Tablespoon white vinegar
1 teaspoon honey
2 Tablespoons pickled jalapeno
¼ teaspoon minced garlic
¼ teaspoon onion powder
¼ teaspoon adobo sauce (optional)
Directions: Pulse all ingredients together in blender and refrigerate.
