I’ve been back from Hawaii for about a week now and boyyy do I miss it! The ocean breeze, toasty sun, and carefree living has it quite hard to forget. The ten days I was there consisted of me tasting a few new things and over-eating several items such as seafood, coconut, and my new personal favorite, PINEAPPLE.
I used to think pineapple was too sweet. Maybe it was the atmosphere or the fresh taste, but I just couldn’t get enough of this stuff a couple weeks ago! I’ve been missing it so I decided to test out a recipe using my new fav and an old one - chipotle.
The recipe below delivers three different flavors that compliment each other quite well - Sweet. Smoky. Spicy. Creating a pilaf allows the rice to separate and stay fluffy - no one likes a rice that’s too heavy. Combining all the elements above makes this side dish delish! ENJOY!

Sweet & Spicy Rice Pilaf
2 tablespoons butter or olive oil
1 teaspoon minced garlic
⅓ cup diced red onion
1 green pepper, diced
1 cup long grain rice
½ chipotle pepper in adobo sauce, minced
2 teaspoons adobo sauce
2 cups diced fresh pineapple
¼ cup pineapple juice (your pineapple has a ton of natural juice that comes out after you cut it! I use this!)
1 ¾ cup chicken stock
Salt to taste
Melt butter over medium heat in large saute pan. Add in garlic, onion, and green pepper and saute for 5 minutes.
Add rice and saute for another 3 minutes. Stir in minced chipotle pepper and adobo sauce. Keep stirring until rice is covered in chipotle.
Pour in pineapple, pineapple juice, and chicken stock. Bring to boil.
Once boiling, turn down to low heat and cover for 20 minutes - Do NOT lift lid!
Take off heat and let sit with lid for an additional 10 minutes. Fluff with fork!
