After a long day of work the task of cooking dinner can sometimes be the last thing anyone would want to do - especially if you are cooking for more than yourself. Finding easy and fast recipes that are nutritious and tasty (AND gluten-free ) can be difficult. This is probably why where the idea of the boxed fresh meals became so popular. They send you all the ingredients in the amounts you need along with a foolproof recipe. BAM, you have yourself a delish meal. Since those kinds of “subscriptions” aren’t always within our budget, it’s important for us to find those types of meals on our own - see below!
Being a family and consumer science teacher I have the opportunity to complete culinary training's for professional development. During my training they talk about the importance of prepping the ingredients before beginning to actually cook the meal. They teach us year after year that it saves A TON of time - this is one of the KEYS to preparing a fast but delicious meal. And equally as important, prepping our ingredients prevents us from running around like a mad person as our tasty meals gets burned right in front of our eyes because we can’t find that one darn ingredient.
For this recipe in particular, you will definitely want to prep all ingredients since the “cooking” portion of the recipe is very fast! Place over a bed of freshly sauteed zoodles or gluten-free pasta and you have yourself a tasty meal. Recipe below!
Simple Chicken & Wine Sauce Saute
2 boneless, skinless chicken breasts - thinned out to 1/2" - 3/4"
⅓ cup gluten-free flour
2 Tablespoons butter
¼ cup onions, diced
1 ½ teaspoons minced garlic
1 cup broccoli, chopped
½ cup white wine
½ lemon, juiced
1 cup chicken stock (gluten-free)
2 teaspoons cornstarch
⅓ cup freshly grated parmesan cheese
4 ounces cherry tomatoes, quartered
Sauteed zoodles or any gluten-free pasta noodle (my favorite for this recipe is rotini)
Coat chicken in flour on both sides and shake off any excess.
Melt the butter in a saute pan over medium-high heat and add the chicken.
Brown the chicken on both sides (3 minutes per side). Take out of pan and set aside.
Add onion, garlic, and broccoli to already heated skillet (do not clean after cooking chicken) Saute for 2 minutes then cover for 2 minutes (this will allow the broccoli to steam).
Deglaze the pan with white wine. In a small mixing bowl, combine lemon, chicken stock, and cornstarch. Add mixture into skillet when white wine has evaporated. Mixture will begin to thicken.
Once mixture thickens, add chicken back in and coat with sauce. Top with parmesan and tomatoes. Serve with noodles or zoodles!
