The sweet potato.

 

A ridiculously nutritious food that is starting to become much more popular within the kitchen. Potatoes are my favorite food but I haven’t experimented a ton with sweet potatoes. What I found out is that I’m not a fan of how most sweet potato dishes are made. For example, the "loaded sweet potato" made with marshmallows and brown sugar just isn't my thing. Sweet potatoes are already sweet so when more sugar is added, it overloads them and I just don’t care for it - unless it is a dessert. My kind of sweet potato dish is balanced out with a little saltiness. Adding a little bacon, cheese, stock, or butter give the sweet potatoes a savory flare. One of my favorite sweet potato sides is listed below - and I have to give a little credit to my guy for giving me the idea. You can make this recipe below a bit healthier by omitting the cheese within the sweet potato mixture and simply add a little to the top - whichever you prefer. I live in Wisconsin and we are all about cheese here! 

 

 

 

Garlic & Mushroom Sweet Potato Mash

 

Ingredients:

3 large sweet potatoes, already cooked (For mine - I poke a few holes in them and place them on the “potato” setting in the microwave. It will usually take 13 minutes)

1 Tablespoon plain cream cheese

1 Tablespoon butter

½ teaspoon minced garlic

1 pound mushrooms, quartered

2 handfuls fresh spinach

½ teaspoon dried thyme

¼ teaspoon salt

⅓ cup mozzarella cheese, shredded

⅓ cup Parmesan cheese, shredded

Freshly grated Parmesan for topping

 

Directions:

  1. Preheat oven to 450 degrees.

  2. Place insides of potatoes, cream cheese, and butter in a bowl. Mash together until smooth and set aside. (the cream cheese mixes much easier if the potatoes are warm or if cream cheese is softened)

  3. In a small skillet, saute garlic and mushrooms together until mushrooms have cooked down - about 15 minutes.

  4. Add spinach and cook for an additional minute.

  5. Add mushrooms, garlic, spinach, thyme, salt, and cheese to sweet potato mixture and stir.

  6. Place potatoes into individual baking dishes and top with grated Parmesan. Bake for 15 minutes.
