I’ve been waiting for this moment for weeks. A perfect excuse to curl up on the couch and not feel guilty for all the shows I am going to binge watch on Netflix. Now that it’s officially getting chilly outside and the snow has begun to fall, we can start enjoying all of our cold weather FAVS - hot chocolate, soups & stews, endless amounts of baked goods, and, of course, CHILI.
There are SO many variations of chili and some people are very particular about their traditional recipes. (Noodles or no noodles?!) If you’re anything like me, I’m a little over regular, plain chili. Not that it isn’t a classic but sometimes it’s nice to add in some other ingredients to boost the flavor and nutrients. I’ve played around a lot with different recipes and ingredients and have found one ingredient to be necessary no matter what kind of chili you are making - COCOA POWDER (Just another way to prove chocolate makes everything better). It adds a lot of depth even if you use a little. So, next time you make your best chili recipe - try it out! One of my favorite chili recipes is listed below. ENJOY!
Sweet Potato & Apple Chili
2 lbs ground turkey
1 small onion, diced
1 sweet pepper, diced (green, red, orange, or yellow)
2 teaspoons garlic
1 sweet potato, diced small
1 apple, peeled and diced small
1 large can crushed tomatoes (28 oz)
2 Tablespoons tomato paste
1 can black beans, rinsed and drained
1 cup chicken stock
1 cup water
2 Tablespoons unsweetened cocoa powder
2 Tablespoons chili powder
¾ teaspoon cinnamon
Salt to taste
In a large stock pot, place ground turkey, diced onion, green pepper and garlic. Cook together until turkey is no longer pink.
Add in remaining ingredients (sweet potato, apple, crushed tomatoes and paste, beans, stock, water, cocoa powder, chili powder, cinnamon) and bring to a boil.
Once boiling, lower heat to a low setting and simmer, covered for 30-40 minutes or until potatoes are tender.
Serve with a dollop of sour cream and cheddar cheese on top, if desired!
