I’ve been craving biscuits ever since my culinary students made them a few weeks ago as their lab activity. It was a sad day not being able to try any. There’s really nothing better than freshly baked, warm biscuits to impress your guests or to accompany a meal.
I tested out a couple recipes but none were hitting the spot. After a few tries, we’ve got it! BACON. GOUDA. CHIVES. It doesn’t get much better than this combination - Plus, my parents loved them and that's really the only stamp of approval you need. I like these biscuits for breakfast but of course you can have them at any meal, any time of day! Recipe listed below!
Bacon, Gouda & Chive Biscuits
2 cups gluten-free baking mix (I use King Arthur brand)
5 Tablespoons cold, unsalted butter - cubed
¼ teaspoon garlic powder
¼ teaspoon salt
4 oz gouda cheese, cubed small
½ lb bacon, cooked and crumbled
¼ cup fresh chives, chopped
⅔ cup half & half
2 Tablespoons butter (Used to brush tops of biscuits)
Preheat oven to 425 degrees.
In a mixing bowl, combine 2 cups gluten-free baking mix and 5 Tablespoons cold, cubed butter. Cut butter into baking mix using a pastry blender or 2 forks until butter is dispersed into small pea-sized chunks.
Add garlic powder, salt, cheese, bacon, and chives and stir until coated with baking mixture.
In another small bowl, whisk together half & half and eggs. Stir into baking mixture until just moistened.
Using a ¼ measuring cup, drop onto baking sheet prepared with parchment paper and bake for around 10 minutes.
Brush biscuits with remaining melted butter - Biscuits best served warm!
