What is your favorite small kitchen appliance? Hands down… No contest… Mine is my VITAMIX. When I bought my Vitamix about a year ago, I was feeling a little guilty. Should I be spending this amount of money on a “blender”? Will I use this as much as I think I will? The answer to both of those previous questions turns out to be a YES. I make smoothies, raw juice, soups, sauces, etc.
With my Vitamix, I've also experimented a lot with making variations of nut butters - using cashews, peanuts, almonds, pecans, walnuts. This is one of my favorite things to make because it is a good way to save a little bit of money. Any kind of nut butter can be expensive and I like the feeling of knowing exactly what is being put into everything I eat. I even make my own peanut butter using peanuts and peanuts only - Turns out perfect every time!
I have had a decent amount of success in creating my own recipes and altering things as I’d like. My ultimate favorite (and my family’s favorite, as well) is Maple Pecan Butter. Although pecans are a little expensive, this butter is worth it and would be a hit at any gathering. Whether you use it as a spread on a breakfast item, (biscuits, french toast, pancakes…) accompanied with fruit, within a baked good, or a spoonful in your oatmeal - it will not disappoint. Even if you don't have a Vitamix, you can make any kind of nut butter in your food processor - it will simply take a little more time to process. Recipe is listed below!
Maple Pecan Butter
(Recipe fills a 12-ounce jar)
3 cups raw pecans (pieces or whole)
3 Tablespoons maple syrup
1 Tablespoon coconut oil (can substitute any flavorless oils)
¼ teaspoon cinnamon
¼ teaspoon salt
Melt 1 Tablespoon of coconut oil and 3 Tablespoons of maple syrup into a small bowl in the microwave - this should only take about 20 seconds. - Set aside.
Place 3 cups raw pecans into your Vitamix (could also use a food processor - this will increase processing time)
Start your Vitamix on a low setting and slowly turn up to the highest setting.
Using your tamper, keep pushing down pecans in all four corners of machine. You should start to notice your pecans turning into a smooth puree.
After a total of about 3 - 4 minutes, pecans should be smooth and be the consistency of brownie batter. Be careful not to over-process as batch will not turn out.
Using a rubber scraper, scrape pecan puree into a bowl and add melted coconut oil/syrup, cinnamon, and salt. Stir until well blended.
Store in any air-tight jar for up to a month in your refrigerator!
